The story
The Back of House – is a Melbourne Exhibition that featured an artist’s interpretation of commercial kitchens and the Back of House in Melbourne’s best restaurants. The series headlined fifteen of Melbourne’s restaurant institutions including Vue de Monde, Jacques Reymond, the Flower Drum, Da Noi and Bacash. With the exhibition officially listed as an event of the 2008 Melbourne Food and Wine Festival the exposure to lovers of food and art was a perfect marriage.
Ralf’s unique representation of each restaurant is remarkable. Each knife hand made, engraved and plunged into an equally fantastic hand-crafted sterling silver table and cloth.
Each restaurant was presented with an individually crafted 18ct white gold knife pendant. Hand made with Ralf’s passion, artistry and skill. Ralf’s interpretation and contribution to the exhibition not only added a new meaning to silver service but a sophisticated and personal touch, appreciated by the audience, exhibiting artist and restaurants represented. To give a truely beautiful, timeless and bespoke piece to each restauranteur to keep, was the perfect gift for their involvement.
Silver Service
Silver service, like all formal food service, is oriented for a right-handed waiter. To serve the food, the waiter stands behind the guest and to the guest’s left, holds or supports the platter with their left hand and serves the food with their right hand. It is common for the waiter to hold the serving-fork above the serving-spoon both in the right hand, and use the fingers to manipulate the two as a pincer for picking up, holding and transferring the food. This technique or form requires much practice and dexterity.
